Full-flavoured ‘testun’ cheese is coated with the pressed grapes used to make Barolo wine. The flavours of the cheese and grapes mingle together to create a flavour that is bitey, creamy, sweet, winey, buttery and sharp all at once. Once you cut through the coating of crushed grapes, the texture is flaky and melts-in-your mouth soft.
Testun loosely translates to ‘hard-headed’, referring to the texture of the cheese. It is typically from the Piedmont Alpes, made with cow, sheep and goat milk and aged for several months. Herdsman from the Alps used to age their cheeses under fruit, flower and hay to enhance their flavour.
This cheese will be the start of your antipasto board! It is also used to enrich recipes like risotto, involtini di manzo (beef rolled), ravioli etc.
Accompaniments: Fig and grapes jam, figs, pears, grapes, dates, nuts, wholemeal crispy bread.
Pairing: fruity flavored red wines like Nebbiolo and Pinot Noir.
