Those looking for the right words to talk about gastronomy in Friuli-Venezia-Giulia must add " Montasio " to their culinary vocabulary. Due to its complex nature but delicate flavour, Montasio is a cheese that can be combined with different recipes and products. If you need a cheese to add to your recipes that give a lot of flavour this is the one! Like for example in a beautiful risotto Montasio and pears, or to add it in a "four cheeses sauce''.
Montasio is a very ancient cheese. The story tells that in the thirteenth century, from the expert hands of Benedictine monks of the Abbey of Moggio Udinese , at the foot of the Montasio plateau of the same name, a cow's cheese with a unique flavor was born.
The first traces of this cheese date back to 1775 when, in San Daniele del Friuli (The famous Friulian town for Prosciutto San Daniele), the name of Montasio was mentioned in a tariff: this document clearly shows a high recognition of Montasio, since it is listed as more than other cheeses present in the same tariff.
