200g Wedge. This is a finely grainy white pecorino cheese with a flaky fracture. The aging of over 60 days gives it an intense and savoury taste that conquers the most demanding palates. A great table and grating Pecorino cheese, made from semi-raw milk, white colour with compact tiny eyes. Hard savoury and tangy cheese, intense and aromatic, tending towards spicy with aging. 

Accompaniments: Honey, Red Onion & Orange Peel Paste Assorti, Pear and Red Wine Paste Assorti, Lambrusco Wine Jelly Assorti. 
Pairing: Full body Red Wines (Brunello di Montalcino, Nero D'Avola, Cannunau) or Strong Ale beers.
